Here’s the recipe from WVNCC’s Culinary Arts Department for a butter rub to add to your turkey before popping it into the oven.
1 pound unsalted butter
1 teaspoon white pepper
2 teaspoons salt
2 tablespoons thyme
2 tablespoons sage
2 tablespoons Rosemary
Mix ingredients into softened butter.
Massage it into the turkey, beneath the skin.
Put any remaining butter mixture inside the turkey’s body cavity.
Cook according to directions.
